Baked pollock, topped with cheddar cheese and an egg, is served between hash brown patties for a special start to the day.
Ingredients
- 8 frozen hash brown patties
- 4 Sea Best Pollock Fillets, thawed
- Salt and freshly ground pepper to taste
- 1 teaspoon butter
- 4 large eggs
- 4 slices cheddar cheese
Directions
- Preheat oven to 350˚F.
- Fry or bake hash brown patties according to package instructions; keep warm.
- Season Sea Best Pollock Fillets on both sides with salt and pepper. Place in a greased 13" x 9" x 2" baking dish. Bake, uncovered, for 9-12 minutes or until fish flakes easily with a fork.
- In a large nonstick skillet, melt butter over medium heat. Break eggs into skillet. Cook eggs “sunny side up” and to desired doneness.
- On each of four hash brown patties, place a pollock fillet, a cheddar cheese slice and an egg; top each with another hash brown patty.
