LOBSTER AVOCADO TOAST

INGREDIENTS

2Sea Best® Whole Cooked Lobsters (cold water), knuckle and claw meat
2slices fresh whole grain bread
2fresh avocados, peeled, pitted
1vine ripe tomato, chopped
1/2cup red onion, diced
1teaspoon lemon juice
2small jalapeƱos, sliced thin (optional)
fresh chives, chopped
sea salt flakes

DIRECTIONS

  • Thaw the lobster in refrigerator. Shell the two whole cooked lobster claws and knuckles and cut the meat into 1/2-inch chunks.
  • Lightly toast whole grain bread slices.
  • Prepare fresh avocado spread by mixing avocados, chopped tomato, red onion, and lemon juice in a small bowl. Gently mash to combine.
  • Spread avocado mixture on toast, top with lobster meat and a few slices of jalapeƱo.
  • Sprinkle with fresh chives and sea salt flakes and serve.
