LOBSTER NAAN PIZZA

INGREDIENTS

1Sea Best® Whole Cooked Lobster (cold water)
1naan bread
2tablespoons olive oil
2cloves garlic, minced
8oz fontina cheese, shredded
4slices cooked bacon, crumbled
1small shallot, chopped
fresh baby spinach
1/4cup sun-dried tomatoes
1/2teaspoon crushed red pepper flakes
salt and fresh cracked black pepper, to taste
4oz sharp white cheddar, shredded
1/4cup freshly grated Parmesan
2tablespoons fresh parsley, chopped (optional)

DIRECTIONS

  • Preheat oven to 350°F.
  • Thaw lobster in refrigerator. Shell one whole cooked lobster and cut the meat into 1/2-inch chunks. Set aside.
  • Place naan bread on a lightly greased nonstick baking pan and spread olive oil evenly over the naan, and then spread with the minced garlic. Sprinkle fontina cheese over the top to cover.
  • Add the toppings. Sprinkle the crumbled bacon, shallots, fresh baby spinach, and sun-dried tomatoes over the cheese. Season with red pepper flakes, salt and pepper.
  • Layer the lobster meat and remaining two cheeses over the top.
  • Bake in the oven for 10-15 minutes until the pizza is golden and bubbly. Garnish with chopped parsley and serve.
