LOBSTER GRILLED CHEESE
Gooey, cheesy and sweet, this grilled cheese favorite with our cold water lobster meat is one for the recipe books!
INGREDIENTS
2 | Sea Best® Cold Water Lobster Tails (cold water) |
1/2 | tablespoon lemon juice |
| salt and pepper, to taste |
6 | slices wheat bread, toasted |
| butter |
6 | slices cheddar cheese |
1/4 | lb brie cheese, diced |
8 | slices bacon, cooked |
| fresh lettuce leaves |
DIRECTIONS
- Thaw lobster tails in the refrigerator. Cook tails according to package directions, dice, and set aside.
- Mix the lobster tail meat, lemon juice, salt and pepper in a bowl, and set aside.
- Butter 1 side of 4 slices of the bread, and begin to assemble two sandwiches with the 4 buttered pieces facing out. (These will be the tops and bottoms of each sandwich.) Build the grilled cheese, top each sandwich with a layer of lobster mixture and a slice of cheddar, 1/4 of the diced brie, lettuce, and 2 bacon slices. Add the piece of unbuttered bread over the layers, and repeat to build the next layer. Top with the buttered bread.
- Heat a large pan over medium heat, grill the sandwiches until the bread is golden brown on both sides and the cheese is melted.
