LOBSTER QUESO
This three cheese, skillet-ready queso will be your new favorite, with our sweet chunks of lobster meat added to the dip.
INGREDIENTS
1 | Sea Best® Whole Cooked Lobsters (cold water) |
1 | lb white American cheese |
8 | oz pepper jack cheese |
4 | oz cream cheese |
2 | cups heavy cream |
2 | tablespoons diced jalapeƱos |
1 | tablespoon shrimp base |
| tortilla chips, for serving |
DIRECTIONS
- Thaw lobster in refrigerator. Shell 1 whole cooked lobsters and discard the shells. Dice the meat and set aside.
- In a double boiler on low heat (enough to keep a gentle boil), add the American cheese, pepper jack cheese, cream cheese and 1 cup of the heavy cream. Stir mixture until cheese begins to evenly melt.
- Add the shrimp base and whisk until evenly distributed. Add additional heavy cream until desired consistency (should be thin enough to flow well, but thick enough to stay on a chip).
- Add diced jalapeƱos to mixture according to preferred spice heat level. If using jarred, add a teaspoon or two of the juice as well for additional flavor.
- Stir in the lobster meat and transfer queso to a bowl. Serve with tortilla chips.
