COCONUT CRUSTED MAHI MAHI SLIDERS
These small bites stacked with our sweet Mahi Mahi, are perfect for smaller hands and the perfect item to introduce to little seafoodies.
INGREDIENTS
4 | Sea Best® Mahi Mahi fillets, cut in half |
3 | egg whites |
3/4 | cup panko breadcrumbs |
3/4 | cup sweetened, shredded coconut |
1 | teaspoon salt, divided, plus more for fish |
| fresh ground black pepper, to taste |
3/4 | cup mayonnaise |
1/4 | teaspoons lime juice |
1/2 | teaspoon cumin |
1 | clove garlic, minced |
3/4 | teaspoon sriracha |
2 | avocados, sliced |
2 | mangoes, sliced |
| purple cabbage, thinly sliced |
12 | mini brioche buns |
DIRECTIONS
- Preheat oven to 375°F. Set a cookie cooling rack on top of a baking sheet and spray with non-stick cooking spray.
- In a small bowl whisk egg whites until frothy. On a large plate, mix panko, coconut and ½ teaspoon salt. Season with fresh ground black pepper to taste.
- Season mahi mahi fillets with salt and pepper to taste. Coat in egg mixture, letting the excess drip off, and then coat in coconut mixture, patting off any excess breading. Place fillets on cooking rack and bake until golden brown and cooked through, about 20 minutes.
- While fish is cooking, mix together remaining salt, mayonnaise, lime juice, cumin, garlic and sriracha.
- To assemble the sliders, spread buns with lime aioli, then place the fish portions on the bottom halves of the buns and top with a little bit of the sliced mango, avocado and purple cabbage.
