SWEET POTATO CRUSTED SALMON
This sweet and crunchy coating gives our rich flavored salmon the perfect texture and bite.
INGREDIENTS
2 | Sea Best® Salmon fillets |
1 | medium sweet potato, grated (1/2 cup) |
1/2 | cup panko bread crumbs |
1 | egg |
1 | tablespoon bourbon |
4 | tablespoons butter |
1/2 | onion, sliced |
1 1/2 | tablespoons maple syrup |
| salt and pepper |
DIRECTIONS
- Preheat the oven to 350°F.
- Pat salmon fillets dry and season both sides with salt and pepper.
- Grate sweet potato and sandwich between towels to absorb excess moisture. Transfer to a small bowl, season with salt and pepper and add panko stirring to mix together.
- In a shallow bowl, whisk 1 egg and place salmon fillets in the beaten egg to coat. Then, dredge the salmon fillets in the sweet potato panko mixture and gently pat to help the coating adhere to the fillets.
- Place the coated fillets on a parchment lined baking sheet. Bake in the oven for 5 to 9 minutes, or until cooked to desired level of doneness.
- While the salmon is cooking, melt butter in a medium pan over medium high heat. Add the onion and season with salt and pepper. Sauté until the onion is soft. Add bourbon and maple syrup and reduce by half and reserve.
- When the salmon has finished baking, place a fillet on a plate and top with onion compote to serve.
