LEMON PEPPER TILAPIA TACOS

LEMON PEPPER TILAPIA TACOS

INGREDIENTS

4Sea Best® Tilapia fillets
1grapefruit, diced
1avocado, diced
1/2 jalapeño, seeded and minced
3tablespoons red onion, minced
1/4cup plus 2 tablespoons fresh cilantro, minced
1/8cup plus 1 tablespoon fresh lime juice
lemon pepper seasoning
8oz. sour cream
4corn tortillas
green onion, sliced

DIRECTIONS

  • Preheat the oven to 400°F.
  • To make the avocado grapefruit salsa, combine diced grapefruit, avocado, jalapeño, onion, 2 tablespoons cilantro, and 1 tablespoon lime juice in a medium bowl. Stir to combine, cover and refrigerate until ready to use.
  • Season the tilapia fillets on both sides with lemon pepper seasoning. Bake the tilapia for 10 to 15 minutes, until the meat turns flakes easily with a fork. Transfer to a cutting board to cool. Slice the fillets into strips.
  • While the tilapia cooks, make the cilantro lime crema. Combine sour cream 1/4 cup cilantro, and 1/8 cup lime juice in a small bowl and stir to combine.
  • To assemble the tacos, gently spread a dollop of the cilantro lime crema over the tortillas. Add some of the salsa and top with some of the lemon pepper tilapia strips to each tortilla. Drizzle the tacos with cilantro lime crema and garnish with green onion.
