The mild flavor of catfish comes alive when layered on a crispy tostada with fresh ingredients like pineapple, jalapeño, red onion and cilantro.


CATFISH TOSTADAS WITH PINEAPPLE SALSA

INGREDIENTS

1lb Sea Best® catfish fillets
12oz Oaxaca cheese, shredded
1carrot, shredded
1/2cabbage head, shredded
1tomato, diced
1package tostada shells
1jalapeño pepper, ribs and seeds removed, minced
2cups fresh pineapple, diced
1/2small red onion, chopped
2 1/2tablespoons lime juice
3tablespoons cilantro leaves, chopped
salt
ground pepper
fresh cilantro leaves, for garnish

DIRECTIONS

  • For the pineapple salsa, combine jalapeño, red onion, lime juice, and chopped cilantro in a bowl. Cover and refrigerate for 20 minutes.
  • Season the catfish fillets on both sides with salt and pepper to taste. Preheat a lightly oiled nonstick skillet over medium-high heat. Cook the catfish fillets in the skillet for about 3 minutes per side. When the catfish is done cooking, transfer to a cutting board and roughly flake with a fork.
  • To assemble, divide the catfish amongst the tostada shells and top with some of the cabbage, pineapple salsa, tomato, carrot and shredded Oaxaca cheese. Garnish with fresh cilantro leaves.
