CRISPY GROUPER TACOS

Step up your Taco Tuesday game with our crispy grouper fillets, stuffed into the perfect hand held and drizzled with a caper dill aioli.


CRISPY GROUPER TACOS

INGREDIENTS

12oz Sea Best® grouper fillets, cut into bite-size strips
1cup corn flour
oil, for frying
1/4cup mayonnaise
1/4teaspoon dried dill
1tablespoon capers
zest of 1 lemon
1teaspoon lemon juice
pinch of salt
mixed greens
1European cucumber, thinly sliced
1red onion, thinly sliced
flour tortillas
lemon wedges

DIRECTIONS

  • For the caper dill aioli, combine mayonnaise, dill, capers, lemon zest and juice, and a pinch of salt in a small bowl and stir until well combined. Cover and refrigerate until ready to use.
  • For the grouper, heat oil in deep-fryer to 350 degrees F. Place corn flour in a large zip-top bag. Working in batches, add some of the grouper strips to the bag and tumble gently until the strips are evenly coated, add more corn flour if needed. Deep fry in hot oil for about 3 minutes, or until done. Fish should be golden brown, slightly crisp on the outside, and moist and flaky on the inside.
  • To assemble tacos, place fried grouper strips on tortillas and add some of the mixed greens, cucumber, red onion to each. Drizzle tacos with caper dill aioli and serve with lemon wedges.
