SEARED SNAPPER WITH CARROT PURÉE

INGREDIENTS

1lb Sea Best® snapper
olive oil
salt and pepper, to taste
3medium carrots, halved lengthwise and cut into 1/2-inch pieces
1garlic clove
1/3cup chicken broth
1/4teaspoon salt
2tablespoons heavy cream
1teaspoon unsalted butter

DIRECTIONS

  • Add carrots, garlic, broth, and salt to a saucepan and simmer covered over medium-high heat until carrots are very tender, about 12 to 14 minutes. Purée mixture with cream and butter in a food processor until smooth. Set aside until ready to serve.
  • Using a basting brush, brush the snapper fillets with olive oil and season both sides of the fillets with salt and pepper to taste.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat, then sear the fish, turning over once, about 4 to 6 minutes. The fish should be opaque and flake easily with a fork.
  • Serve the snapper with carrot purée, mashed potatoes and roasted asparagus.
