AHI TUNA STEAK QUINOA SALAD

This salad combines the strong flavor of wild caught Ahi Tuna, with fresh ingredients and wild grains for a delicious and nutritious meal.


AHI TUNA STEAK QUINOA SALAD

INGREDIENTS

4Sea Best® Ahi Tuna steaks
2cups cooked quinoa
2cups shredded red cabbage
2cups shredded green cabbage
1cup shredded carrots
1cup cooked edamame
1cup packed fresh cilantro leaves
1/2cup roasted peanuts, chopped
5tablespoons creamy peanut butter
1/2tablespoon sesame oil
1tablespoon soy sauce
1/2tablespoon sriracha
1teaspoon honey
juice and zest of 1 lime
2tablespoons water

DIRECTIONS

  • Sear ahi tuna steaks according to package instructions and set aside.
  • In a large bowl, combine the quinoa, red and green cabbage, carrots, edamame and cilantro and toss to combine. Set aside.
  • To make the peanut dressing, in another bowl, whisk together the peanut butter, sesame oil, soy sauce, sriracha, honey, lime zest and lime juice. Stir in the water until the dressing is smooth.
  • Pour the dressing over the cabbage mixture and toss to coat. Divide the salad amongst 4 plates, and top each salad with a 4 oz. portion of tuna. Garnish with chopped peanuts and serve.
