ROASTED HARISSA SALMON
Earthy North African chiles of the harissa spice, take our salmon to a next level with this exotic recipe.
INGREDIENTS
4 | Sea Best® Salmon portions |
1 | bunch broccoli, florets |
5 | tablespoons olive oil |
2 | teaspoons harissa paste |
| juice of 1 lemon |
2 | cloves garlic, minced |
| cooked couscous, for serving |
DIRECTIONS
- Preheat oven to 400°.
- Line a large baking sheet with foil and spray with nonstick cooking spray. Season both sides of the salmon portions with salt and pepper, place in the middle of the prepared baking sheet.
- In a small bowl, combine 2 tablespoons of olive oil, harissa paste, lemon juice and half the minced garlic. Brush the harissa mixture onto each salmon portion. In a large bowl, combine broccoli, 2 tablespoons olive oil and remaining minced garlic and toss to coat. Season with salt and pepper and toss again. Spread broccoli in an even layer around the salmon portions. Bake for 15 minutes. Divide the couscous and broccoli amongst 4 plates, place one salmon portion on each plate and serve.
