SALMON PENNE BAKE

INGREDIENTS

4Sea Best® Salmon portions
12oz. dry penne
1bunch asparagus, cut in 2" pieces
2zucchini, sliced
1tablespoon olive oil
1tablespoon Italian seasoning
2tablespoon butter
2cloves garlic, minced
3tablespoons all-purpose flour
1 1/2cups half and half
12oz. mascarpone cheese
1cup mozzarella, shredded
1/2cup Parmesan, grated
1teaspoon salt
1teaspoon pepper

DIRECTIONS

  • Preheat oven to 375°.
  • Coat 9x13" baking pan with cooking spray. Cook pasta to al dente. Add zucchini and asparagus for last 2 minutes of cooking. Drain and pour into baking dish. Dice the salmon, and season with olive oil and Italian seasoning, and layer over the pasta and vegetables.
  • Melt butter in a saucepan over medium heat. Add garlic and sauté about 1 minute. Add flour and cook 1-2 minutes. Whisk in half and half. Heat until thickened, about 5 minutes. Remove from heat and add mascarpone, mozzarella, salt and pepper. Stir until smooth. Pour sauce over salmon and pasta. Top with Parmesan. Bake 30 minutes or until top is browned, cheese is bubbly and salmon is cooked through.
