SALMON PENNE BAKE
This casserole pasta bake combines all your healthy favorites with Omega-rich salmon for a ready-to-serve meal!
INGREDIENTS
4 | Sea Best® Salmon portions |
12 | oz. dry penne |
1 | bunch asparagus, cut in 2" pieces |
2 | zucchini, sliced |
1 | tablespoon olive oil |
1 | tablespoon Italian seasoning |
2 | tablespoon butter |
2 | cloves garlic, minced |
3 | tablespoons all-purpose flour |
1 1/2 | cups half and half |
12 | oz. mascarpone cheese |
1 | cup mozzarella, shredded |
1/2 | cup Parmesan, grated |
1 | teaspoon salt |
1 | teaspoon pepper |
DIRECTIONS
- Preheat oven to 375°.
- Coat 9x13" baking pan with cooking spray. Cook pasta to al dente. Add zucchini and asparagus for last 2 minutes of cooking. Drain and pour into baking dish. Dice the salmon, and season with olive oil and Italian seasoning, and layer over the pasta and vegetables.
- Melt butter in a saucepan over medium heat. Add garlic and sauté about 1 minute. Add flour and cook 1-2 minutes. Whisk in half and half. Heat until thickened, about 5 minutes. Remove from heat and add mascarpone, mozzarella, salt and pepper. Stir until smooth. Pour sauce over salmon and pasta. Top with Parmesan. Bake 30 minutes or until top is browned, cheese is bubbly and salmon is cooked through.
