SALMON SPINACH LASAGNA

INGREDIENTS

4Sea Best® Salmon portions
6flat pasta sheets
6tablespoons butter, divided
3leeks, finely chopped
9oz. baby spinach, lightly chopped
1cup mozzarella, shredded
1/2cup all-purpose flour
4cups milk
1lemon, zest only
1tablespoon dijon mustard
1tablespoon fresh dill, chopped
3/4cup Parmesan cheese grated
salt & pepper, to taste

DIRECTIONS

  • Preheat oven to 350°.
  • Bake salmon for 15 minutes. Set aside. Heat 1 tbsp butter in a skillet over medium. Add leeks and cook 5-10 minutes. Add spinach, stirring until it wilts. Set aside. Melt remaining butter in a saucepan. Whisk in flour and cook 2 minutes. Whisk in milk until incorporated. Bring sauce to low simmer and cook until thickened, 3-4 minutes. Add mustard, dill, lemon zest, half the Parmesan, and salt and pepper to taste.
  • Roughly chop the salmon. Add sauce to a 9x13 baking dish. Lay 2 pasta sheets side by side over sauce. Add more sauce. Add salmon and half the mozzarella. Add more sauce. Top with 2 more pasta sheets. Add leeks and spinach and remaining mozzarella. Top with more 2 pasta sheets and remaining sauce. Sprinkle with remaining Parmesan. Bake for 25 minutes.
